I'll try to remember what I have usually seen in a meat department of a grocery store:

Raw beef, pork and lamb -- available.
Chicken -- available.
Franks and similar -- available.
Pork chops (not prepared for immediate cooking) -- available.
Pelmeni (meat dumplings, usually pre-made and frozen) -- available.
Canned prepared pork -- available.
Smoked/salted lard -- available.
Bologna -- available.
Pre-cut steaks -- may be unavailable.
Pork chops (prepared and seasoned for immediate cooking) -- unavailable.
Duck -- unavailable.
Turkey -- unavailable.
Salami -- usually unavailable.

I really don't see a problem. More variety would be good, but it's not a horrible failure of economy, possible cause of malnutrition or even a major annoyance.
