Why don't most people just encrypt everything end to end? Because that's not in capitalism's interests. When the economy is primarily about consumption, the behavior of consumers is the most sought-after information. As such, there's no incentive for the current "cloud" and software-as-service providers to "secure" your data.

However, that does not mean that the current model of "we'll offer you free services if you allow us to data-mine your life" will be accepted by "consumers" of the future. A lot of companies stand to gain from differentiating their "cloud" offerings as "PRISM-proof". Case in point: Kim Dotcom's MEGA, which was conceived when its predecessor was shut down precisely because it did not offer protection to its customers.
